Pancakes Recipe

Here is my super simple pancakes recipe (you can count the ingredients on your hands). I use these as a carb source when I get ready for a show. I make them and eat them throughout the day.

What you’ll need:

  • 1 Sweet Potato
  • 1 Cup Oatmeal
  • 4 egg whites and 1 egg
  • 1 Scoop Nutrex Muscle Infusion
  • 1 Tbsp Cinnamon
  • 1 Tbsp Baking Soda
  • Non-stick Pan with Coconut Oil

Bake Sweet Potato at 375 degrees in oven for 45 minutes. Remove skin from Sweet Potato and add to blender (NutriBullet is ideal). Add ingredients (oatmeal, eggs, Nutrex Muscle Infusion, Cinnamon, and Baking Soda) and blend until mixed well (approximately 20 seconds).

Lightly coat non-stick pan with Coconut Oil. Use a paper towel to wipe away excess oil.

Pour mixture into pan, creating (3) pancakes at a time. Add banana or other fruit to mixture prior to flipping and while still soft.

Garnish with blueberries or your favorite fruit. Enjoy!
